Almond Bread

I made this when I got up this morning. It’s not too sweet, and it makes a good bread for toasting.

Almond Bread

3 c Flour
1 c Sugar
1/2 tsp salt
4 tsp Baking Powder
2 Eggs, beaten
2 c Milk
1/2 Oil or melted butter
2 Tbsp lemon juice
2 tsp lemon zest
1/2 cup Almonds, chopped

In a large mixing bowl, combine together flour, sugar, salt,  and powder. In another bowl beat the eggs and add the oil or butter, milk and then lemon juice and zest. Add this to the flour mixture and stir together just until the flour is moist.  Add nuts. There should be lumps in the batter.

Heat oven to 350 degrees. Grease two bread pans and spoon batter in. Bake for 50 mins.  Set on a rack to cool for 10 mins before removing the loaf from the pan. Once I took it out of the pan, I rubbed butter over top of the loaf to keep the crust soft.

      This was very good. I had some as toast for breakfast. I think it would also be good as french toast as well. I took some in to work today and it disappeared quickly.
