Weekends are great for relaxing and for me that means cooking.

Sunday Brunch

I’m working on omelets and clearly I need to improve. I sauteed green and red peppers and some scallions in a teaspoon of butter. I used an eighth of each the red and the green and one stalk of the green onion.

peppers and onionsWhile this cooked, I mixed 3 eggs with 3 Tablespoons of half and half. I added a dash of salt and a dash of dill. I poured the eggs into the skillet and then topped it off with a half cup of shredded cheese. I left this to cook on low for about 4 to 5 mins and then I flipped it like a pancake to cook for another 2 mins. That’s when it fell apart, but it still tasted good.
