Chocolate Cherry Cupcakes

On February 14th my mother-in-law came to the door with these beautiful treats. Thank you Marcella Auhl. My family is enjoying them and they are lactose free.

Chocolate Cherry Cupcakes

1 box of lactose free chocolate cake mix, follow directions on box, adding eggs, oil and water
1 can of cherry pie filling, 21 oz

Mix cake mix as directed and blend in the pie filling. Bake according to directions, 20 to 25 min, at 350 degrees. Cool completely on a rack before icing.

Chocolate Frosting, I got this recipe from the Dairy free Diva

3/4 cup dairy-free spread
2 2/3 cups powdered sugar
6 tbs unsweetened cocoa powder
2 tsp vanilla extract

Put the dairy-free spread in a bowl and sift the powdered sugar and cocoa powder over it.
Add the vanilla extract and gradually work into the spread with a wooden spoon.
Then once it is well incorporated beat with an electric mixer until smooth and fluffy.
You might need to work up to 4 tsp of water into the frosting in order to get a soft consistency for spreading.
