Chocolate Chip Cookies – gluten free

I am happily progressing in my quest for baked goods that fit a gluten free diet. Some household members require this option and I shall rise to the challenge!

Chocolate Chip Cookies – gluten free

1 stick butter
1/2 c sugar
1/2 c brown sugar
1 egg
1 tsp vanilla
1  1/2  c Gluten free baking mix ( I use Arrowhead Mills Organic)
2 Tbsp Just Whites (egg white powder)
1 tsp baking powder
1/2 tsp salt
1/4 tsp ground allspice
1/4 c milk
1 bag chocolate chips

Blend softened butter and both types of sugars together until creamy. Beat in the eggs and vanilla.  Add in dry ingredients, pour in milk and mix. Blend well with electric mixer for several minutes. Chill the dough for about 20 min. Place spoonfuls of dough on ungreased cookie sheet. Bake at 375 for 10 to 12 min. I keep the dough in the fridge between batches. It’s easier to work with when cold.

Allow to cool for a min on the baking sheet, then remove to a rack to finish cooling. They will be more crumbly and delicate than flour cookies, but can be kept in an airtight container for several days. The hearty baking mix has a slightly nutty flavor that gives the impression that you added some peanut butter to the batch – this surprise was well received.
