Cider Carrot Cake

Cider vinegar makes this cake taste great.

Cider Carrot Cake

I wanted to take something sweet to a meeting tonight, and this cake was the winner.

Cider Carrot Cake

2 c Sugar
2 Tbsp Molasses
1 c canola oil
3  eggs
3 1/2 c Flour
2 tsp Baking Soda
1 1/2 tsp Salt
1 tsp Cinnamon
1 tsp Nutmeg
1/2 c Water
1/2 c Walnuts
1/4 c Coconut flakes
3 c Carrots (boiled until soft and then processed)
1/2 c cider vinegar

Mix Sugar and oil with an electric beater. Add Eggs and mix well. Set aside. In a bowl measure out flour, soda, salt and spices. Alternately add the flour mixture and the water to the Sugar and Oil combination. Beat the mixture until smooth.

Using a food processor, mix the vinegar and the boiled carrots. Stir the nuts, carrots and coconut into the batter. Pour into a 9 x 13 greased pan, or two 8 x 8 pans.

Bake at 350 for 40 min for 9 x 13 and 30 min for 8 x 8. Check doneness of cake by seeing if a toothpick inserted in the middle of the cake comes out clean. Cool on a rack before icing.

Orange icing

2 c Powdered Sugar
1/4 c Butter, softened
2 Tbsp Orange juice
1/4 tsp Orange zest
2 Tbsp Milk

Zesting OrangeCombine in a bowl, mixing with electric beater until smooth. It should be thick and creamy add more powdered sugar if it is too thin.

Ice the cooled cake.
