Getting home at 5 can present a challenge in making dinner. We didn’t sit down to eat until 8 pm. Had a dinner of baked fish, carrots, wild rice, roasted potatoes and olive focaccia.

I have been trying several types of bread and I keep coming back to focaccia. It does take a little longer than a  loaf of bread. Ideally you should let t rise three times at almost an hour each time, but the texture and crumb are worth the wait.

Olives are very popular in our house, so I covered this bread with capers, olives, red peppers and garlic.

My appetizer took so long to fix that it became the second course: scallops wrapped in bacon. I had purchased frozen scallops, so thawing was necessary before I could cook them. The result was very tasty – ummmm bacon.
