Hungarian Mushroom Soup

Tonight I had mushrooms that needed to be used so I tried this creamy Paprika spiked soup.

This is the recipe I used:

While the onion sauteed in butter, I decided to add finely sliced leeks. Next I added white wine (1 cup) and I cut back on the broth by one cup. I was very pleased with the result.

We also had a mixed green salad topped with thinly sliced cucumber.

Balsamic Vinaigrette with pumpkin seed oil: I had purchased pumpkin seed oil at Wegman’s (local market) and I used it in this recipe for a tangy dressing. The acidic bite of the vinegar is a perfect balance to the smokey roasted pumpkin oil. I added a dash of ground ginger before mixing.

We finished dinner with Roasted chicken and rice.
