Lemon Cloud

I made something recently that I have not tasted since I was a child. I have been on a pudding/mousse/jello jag for a while now and this light confection was just right for dessert after dinner on a warm night.

When I was little, my mother made a jello dish that was down-right inspired. Whipped jello! Jello was pretty popular back in the day and I found all sorts of dishes in the little recipe box that I inherited from my grandmother. Here is one of my favorites. This is so simple and so good.

Make a fruity jello according to the box direction. I chose lemon flavor. For this recipe, 2 cups of water are to be added. I heated 1 cup of water and mixed it in then I added a cup of Club Soda. Stir in the club soda and put the bowl in the refrigerator. After about 10 or 15 minutes, blend the jello with an electric beater until the jello foams up. Spoon into small dishes and chill for several hours. You could also use sugar-free jello.
