Mushroom and Chive Scrambled Eggs

This brunch dish was pretty popular. I wanted eggs with mushrooms, but I knew that not everyone is a fungi fan. So I decided to scramble some eggs and put out a variety of toppings so we could each have designer eggs.


I had a dish of eggs, the mushrooms and chives and then a platter of cheeses. I chose Brie to complement the mushrooms. Fruit and bacon were also offered.

Well this was pretty easy. I just sauteed a container of sliced mushrooms in butter.  Then I chopped some chives and added dash of salt.  I made 12 eggs and prepared the fruit. Once I started the bacon, people began to materialize in the dining room. Every weekend I know that I’ll have a quiet morning to myself until the coffee and bacon get started.
