I suppose it’s not too odd to have veggies for breakfast. This blend of peppers and onions was the perfect companion to my eggs and muenster.
It’s March, so I couldn’t use home grown peppers, but I am planning to plant a larger garden this summer. I had a yellow onion and I used yellow and orange peppers — I sauteed them in a scant teaspoon of olive oil and a dash of salt. It tasted as good as it looks.
The flat bread was purchased (above), but now I have decided to experiment with making some this week. I’ll start with my basic cracker recipe, like these that I made not long ago. I used white flour, seeds and parmesan. The addition of sunflower seeds and pumpkin seeds is a must.
