Pistachio Pesto

I made this delicious Pesto for dinner. It was very garlicky and oh so good. This is based on a recipe I found in Fine Cooking magazine (Feb 2012), with a few modifications.

Pistachio Cilantro Pesto

2 c Cilantro, rinsed
2 cloves of garlic pealed
3/4 c Pistachios shelled
5 Tbsp Olive Oil
2 tsp lemon juice
1/2 tsp Sea salt

Add cilantro, nuts and garlic to food processor, and blend until coarsely chopped. Add oil, lemon juice and salt.  Process until smooth.

I served this on roasted vegetables. The combination of cilantro and pistachio is a surprising success. It would also be good on pasta or grilled fish or chicken.
