Spinach and Red Pepper Strata

This makes for a delicious Sunday brunch. One morning I had coffee brewing, bacon sizzling and this in the oven when my family came down in the morning, the aroma filled the house and it was heavenly. I particularly like the versatility of this dish, just about any mixture of vegetables and cheese will work. In the past I have used Gruyere and mushrooms; brie and scallions; and this spinach, red peppers and cheddar.

Spinach Strata

Spinach and Red Pepper Strata

8 eggs
1 c of milk or half and half
1/2 tsp dry mustard
1/4 tsp coriander
1/4 tsp salt
1/8/ tsp pepper
8 slices of bread,  I used italian, day old is best
1/2 c frozen, chopped spinach, drained
1/2 c red Pepper
1/2 c onion
1 tsp butter
1 c cheddar cheese shredded

Blend eggs, milk and spices and set aside. Saute onion, peppers and spinach in butter over medium heat. Preheat oven to 350 degrees. Grease a 9 by 13 inch pan. Layer the bread in the pan, spread the vegetable mixture over the bread and sprinkle cheese on the veggies. Pour the egg  mixture over the cheese and bake for 45 minutes, or until firmly set.
