Walnut Chicken Salad

I made salad with some leftover lemon pepper chicken that I had made the day before.

Walnut Chicken

When I was young my mother would take us to Neiman Marcus in the summer to shop for the coming school year. We would drive to Dallas and visit the flagship store on Main street. We spent the day trying on beautiful things, looking at fun toys and shopping.

NM_cookbookA highlight was lunch at the Zodiac room (here’s a screen shot of their cookbook). There were so many good things on the menu but I loved the Chicken salad and popovers. The light, fluffy popovers were served with strawberry cream cheese. My version of Chicken salad does not contain grapes or apples and  I use walnuts instead of pecans, but I must tip my hat to the Neiman’s inspiration.

Walnut Chicken Salad

4 Chicken Breasts, cubed
2 Celery stalks, chopped
1/2 Onion, diced
1/2 c Walnuts, chopped
4 Tbsp Mayonnaise
1/2 tsp Lemon juice
1/4 tsp Curry powder
1/4 tsp Salt
1/4 tsp Tarragon

Mix all together and and chill for 1 hour.
